Stardew Valley: Best late-game money maker that isn't ancient fruit wine spam?

I'm in year 5 of Stardew Valley and have optimized the ancient fruit wine operation to death. It's profitable, but boring! What are some other highly lucrative, engaging late-game strategies or crops/animals you've found that keep things interesting and still pull in serious Gs? Looking for fresh ideas beyond the usual advice!
