Seeking a lightweight, privacy-focused alternative to Adobe Acrobat Pro for basic PDF edits on macOS

Adobe Acrobat Pro is overkill and too resource-intensive for my occasional need to merge, split, or annotate PDFs. I'm on a Mac and really value privacy in software choices. Are there any solid, less bloated alternatives out there that won't break the bank or harvest my data? Really hoping to find a good solution here!
